Lemon Prosecco Herb Quinoa Bowl

1 cup quinoa, rinsed
2 cups water or vegetable broth
1/4 cup Bloombox Foods' Lemon Prosecco vinaigrette
1 cup mixed fresh herbs (such as parsley, cilantro, and mint), chopped
1 cup cherry tomatoes, halved
1 cucumber, diced
1 avocado, diced
1/4 cup feta cheese, crumbled (optional)
Salt and pepper to taste



  1. In a medium saucepan, bring water or vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed.
  2. Remove from heat and let it sit for 5 minutes.
  3. Fluff quinoa with a fork and transfer it to a large mixing bowl.
  4. Add Lemon Prosecco vinaigrette to the cooked quinoa and toss to coat evenly.
  5. Fold in chopped fresh herbs, cherry tomatoes, cucumber, and avocado.
  6. Season with salt and pepper to taste.
  7. Top with crumbled feta cheese, if desired.
  8. Serve immediately or refrigerate for a chilled salad.
