Ingredients:
1 cup quinoa, rinsed
2 cups water or vegetable broth
1/4 cup Bloombox Foods' Lemon Prosecco vinaigrette
1 cup mixed fresh herbs (such as parsley, cilantro, and mint), chopped
1 cup cherry tomatoes, halved
1 cucumber, diced
1 avocado, diced
1/4 cup feta cheese, crumbled (optional)
Salt and pepper to taste
Instructions:
- In a medium saucepan, bring water or vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork and transfer it to a large mixing bowl.
- Add Lemon Prosecco vinaigrette to the cooked quinoa and toss to coat evenly.
- Fold in chopped fresh herbs, cherry tomatoes, cucumber, and avocado.
- Season with salt and pepper to taste.
- Top with crumbled feta cheese, if desired.
- Serve immediately or refrigerate for a chilled salad.
