Leafy Green Salad

Servings: 4-6


2 cups Leafy Greens

2 tbsp Leafy Dressing

1 lb Ripe Tomatoes

1/2 Sliced Red Onion

1/2 Shaved Summer Squash

1/2 cup Seasoned Croutons

1/4 cup Grated Parmesan Cheese



1. Thinly slice red onion and summer squash.

2. In a large bowl toss the greens, tomatoes, onion, squash and dressing.  Add salt to taste and toss again if necessary.

3. Transfer to a serving bowl and top with parmesan cheese.

Chef Tip: Cut thin strips of chicken and pan fry with olive oil.  Finish with the Leafy Dressing.  Place strips on the top of your salad.
