Arugula & Avocado Salad

Serves: 4-6


2 cups Arugula Leaves

2 tbsp Arugula Dressing

1 lb Ripe Tomatoes

2 Large Avocados

1/2 Red Onion

1/4 cup Grated Cotija Cheese


1. Cut tomatoes into 8 wedges.

2. Thinly slice red onions.

3. Cut avocados in half, remove seeds, and use a butter knife to remove the inner flesh in cubes.

4. In a large bowl toss all ingredients except cheese.  

5. Transfer the tossed salad to a salad bowl and top with cheese prior to serving.  

Chef Tip: This salad pairs deliciously with carne asada prepared on a grill.
